importing LongText fields

I've got a large db I downloaded in a .SQL format that came originally from
MySQL. I'm trying to alter the code to allow me to run it under MS-SQL.
I've got it mostly translated over, but I'm running into a problem with

how to check if RAID is implemented?
I just took over the SQL 2000 server from the former DBA. Is there any way
to check if/how RAID is implemented on the server? Is this a more general
windows admin question or it's also something that a DBA should also be
awared of?

Default Collate Codes for SQL 7 and 2000

SQL 2000 patch level
Can anyone tell me how to determine the installed SP and patches for SQL
Server 2000? Where or how can I find this information within a running
system other than in add/remove programs? I could have sworn I installed SP3
and KB815495, but they are not in add/remove programs.

Sql Server 2000 Mulitlingual Best Practices (Collations and sorting)
Probably the best alternative would be unicode fields,
which are bi-lingual.
There are storage issues involved however.
